Meringue Powder, Ready to Use
Ingredients: Sugar, maltodextrin, corn syrup solids, dried egg white, gum arabic, calcium lactate, modified corn starch, lactic acid, sodium aluminum sulphate, cream of tartar, citric acid, cellulose gum, locust bean gum, xanthan gum, artificial flavour,
Intructions: For one pie, place 81g (9 level tbsp) of powder and 75 ml (5 tbsp) warm water (43-46C/100-120F) into a clean bowl.
Stir until dissolved then beat with wire whip at high speed until desired peak (approximately 7 minutes).
Royal Icing: For one 5cm-15cm (2"-6") fruit cake, add to above mix 170g (1.5 cups) of sifted icing sugar and mix with spatula until smooth. Do not whip.
To prevent icing from becoming brittle, add a pinch of glycerine just before mixing is complete.
